Hello friends! I’m so excited about the sunshine, warm days and the vegetables growing on my little patio garden that will be used to create sauces, salsas and more! Now that the kids are on summer break, they’re excited about spending time with friends at the pool!
We’re headed there today so I’m thinking about what food to take along. It’s inevitable that everyone gets hungry during a swimming session, so I usually pack fruits, vegetables and some kind of cheese and crackers or chips and salsa for them to munch on in between splash fights and cannonballs.
Today we are in the mood for some chips and salsa! The sunshine has me dreaming of all things golden yellow, so using a pineapple just seems fitting, don’t you think?! I have a mint plant going absolutely crazy, so I decided that some of that beautiful smelling green goodness would work really well in this salsa too. 🙂 These ingredients are each great on their own, but I am forever amazed by how combining just a few ingredients (only 5 in this case!) transform into something so amazing and bursting with flavor.
This bowl of happiness takes just a couple of minutes to throw together, so that’s a bonus!There is one tool that I think makes tackling this salsa even easier. This pineapple corer. It’s less than $10 and going to make an already fairly easy prep into something that takes just a few seconds. I’m all about quick and easy these days. I mean…we do have a pool to get to. Let’s do it!
This dish says salsa in the title, so of course it’s perfect with tortilla chips…but it can be used for oh so much more, friends! It’s really amazing served over a chicken breast, pork chop or roasted potatoes. Yum! The salsa is sweet from the pineapple and has as little or as much heat as you like from the jalapeno. The mint is the icing on the cake with its fresh, sweet flavor and cool aftertaste.
It’s time for me to pack this salsa for snacking at the pool! It will be nice and cool when the kids are hot and ready for a little rest and bite to eat. It would also be a wonderful snack to throw together when guests are coming over. Take it to a barbecue or family gathering and I can promise that someone will ask for the recipe! 🙂

- 1 cup pineapple, diced
- 7-10 leaves mint, chopped
- 1/2 small red onion, finely diced
- 1/4-1 jalapeno, seeded and finely diced (leave seeds for extra heat)
- 1 lime, juice only
- salt & pepper to taste

Chop, dice, juice and combine all ingredients well.

TASTE! Add salt and pepper to your liking.

Serve as a dip with tortilla chips or serve over chicken breast, pork chops or roasted potatoes.
