I’ve never really been a breakfast person. I just don’t wake up ravishing like my kiddos sometimes do. This morning was different and since today was going to be a busy one, I wanted to make sure I started the day off with a full belly and lots of energy. Eggs are super filling and always keep me feeling satisfied for hours. I had some fresh guacamole in the fridge calling my name, so I decided to make a quick breakfast burrito. YUM!
Just LOOK at these beautiful farm fresh eggs! I love seeing the little speckles on the shells. Almost too pretty to eat…almost.
Get two of those beauties into a nonstick pan and scramble – no butter or oil needed if you use the right skillet!
Warm a tortilla and top with some shredded cheese.
Add the finished scramble eggs.
Top with salsa and/or guac…both for me please!
I mean, come on! It only took a few minutes to make this super tasty, super filling breakfast burrito.
What’s stopping you?!
My favorite thing about cooking is that it doesn’t matter what ingredients you have on hand. You can ALWAYS come up with something yummy.
Don’t have salsa? Use some chopped tomatoes. Don’t have guacamole in your fridge? Don’t let that stop you. Have an onion? Dice it up, cook until translucent, add the eggs and scramble together. Out of tortillas? Skip the burrito and make it a scrambled egg dish.
Add what you love and leave out what you don’t. Don’t be afraid to make it your own!

- 1 tortilla
- 1/4 cup shredded cheese I used a Mexican blend
- 2 eggs
- 1 tbsp salsa
- 1 tbsp guacamole
- hot sauce if desired

Preheat a nonstick skillet to medium heat.

Add the eggs and scramble. Add salt and pepper to taste. Cook 1-2 min to desired firmness.

Warm the tortilla and top with cheese.

Add the cooked eggs on top of the cheese.

Add the salsa and guacamole and wrap.

Slice and enjoy hot. Add some hot sauce to kick it up if you like!
