I needed to get dinner on the table fast tonight. We had practices, pickups and places to be so I was looking for something healthy, filling and quick! This pasta is super easy and takes less than 15 minutes to throw together, while being packed with flavor!
I like to make my own pasta sauces and of course I use sauce from a jar too, but tonight I wanted something that felt a little lighter. The olive oil lightly coats the pasta and the crushed red pepper gives it some heat (I used a little more than listed in the recipe, so adjust on the “taste” step!). The spinach and tomatoes give the dish a really fresh taste. YUM!
If you need the meats and still want this on the table fast, some shredded rotisserie chicken tossed in would be perfect!

- 1 serving angel hair pasta
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 tsp crushed red pepper
- 1/4 tsp onion powder
- 2 campari tomatoes, diced
- 1 cup fresh spinach
- salt & pepper to taste
- fresh grated parmesan
-
Prepare pasta according to package directions.
-
While the pasta is cooking, bring a skillet to medium heat.
-
Add the olive oil and garlic and cook for 1 minute.
-
Add the crushed red pepper and onion powder and cook another minute, stirring throughout.
-
Drain pasta and add to the skillet. Toss to combine with seasoned oil.
-
Add tomatoes and fold into pasta. Stir while cooking 1 minute.
-
Add spinach and gently toss to combine as the spinach wilts for about 2 minutes.
-
TASTE! Adjust seasonings. Add salt & pepper to your liking.
-
Serve immediately! Top with fresh grated parmesan if that's your thing š
