Quick Garlic Spinach Pasta

I needed to get dinner on the table fast tonight. We had practices, pickups and places to be so I was looking for something healthy, filling and quick! This pasta is super easy and takes less than 15 minutes to throw together, while being packed with flavor!

 

I like to make my own pasta sauces and of course I use sauce from a jar too, but tonight I wanted something that felt a little lighter. The olive oil lightly coats the pasta and the crushed red pepper gives it some heat (I used a little more than listed in the recipe, so adjust on the “taste” step!). The spinach and tomatoes give the dish a really fresh taste. YUM!

 

 

 

If you need the meats and still want this on the table fast, some shredded rotisserie chicken tossed in would be perfect!

Ingredients
  • 1 serving angel hair pasta
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 tsp crushed red pepper
  • 1/4 tsp onion powder
  • 2 campari tomatoes, diced
  • 1 cup fresh spinach
  • salt & pepper to taste
  • fresh grated parmesan
Instructions
  1. Prepare pasta according to package directions.

  2. While the pasta is cooking, bring a skillet to medium heat.

  3. Add the olive oil and garlic and cook for 1 minute.

  4. Add the crushed red pepper and onion powder and cook another minute, stirring throughout.

  5. Drain pasta and add to the skillet. Toss to combine with seasoned oil.

  6. Add tomatoes and fold into pasta. Stir while cooking 1 minute.

  7. Add spinach and gently toss to combine as the spinach wilts for about 2 minutes.

  8. TASTE! Adjust seasonings. Add salt & pepper to your liking.

  9. Serve immediately! Top with fresh grated parmesan if that's your thing šŸ™‚
