We’ve rushed though another week…how did that happen? It’s the start of Memorial Day weekend, my husband’s birthday is Sunday and it’s Indy 500 weekend (which in my neck of the woods is kind of a big deal!)! š My vegetables are sprouting on the patio and the kids only have three more days of school next week until Summer Break!! Life is good!
With all of that fun stuff in the back of my mind, it’s time to think about pizza night!
Mya is under the weather with a cold, so she’s having soup (that I bought at a restaurant and didn’t make – I won’t apologize for not being superwoman!) and the rest of us are having three cheese veggie pizza!
Not that an explanation seems necessary for using lots of cheese in any recipe, but I’m using three cheeses to give the pizza lots of extra flavor. You’ll see the difference, I promise! I get stuck using mozzarella most of the time, and there is nothing wrong with it, but tonight I’ve got a variety in the fridge so I’m going with it! I’m using sliced provolone, shredded mozzarella and fresh parmesan…sound good?!
Using leftover veggies for a pizza at the end of the week is a great way to clean the fridge! I’m using spinach and mushrooms. What do you have left that you can use? Maybe some tomatoes, peppers or onions? Just chop them all up about the same size so they cook evenly and add those babies like I’m doing with my vegetables. You can’t mess this up!

- 1 pizza dough
- 1 cup pizza sauce
- 1 tsp crushed red pepper (optional)
- 1/2 tsp dried oregano
- 7 slices provolone cheese
- 3/4 cup shredded mozzarella cheese
- 1/2 cup grated parmesan
- 1 cup fresh spinach (torn)
- 1/2 cup diced mushrooms

Preheat oven to 425.

Roll dough out on parchment paper lined sheet pan.

Top with pizza sauce and spread evenly over the dough.

Sprinkle crushed red pepper over the sauce (omit if you don't handle heat).

Top with spinach and mushrooms or all veggies of your liking. Try to keep an even layer so everything cooks evenly.

Top with provolone slices, shredded mozzarella and parmesan.

Sprinkle oregano evenly over the top and place in preheated oven according to package instructions. Mine took 17 minutes.

Enjoy hot!
Everybody loves pizza night and tonight was no exception. My son ended up with a few turkey pepperonis on his plate and was a happy guy!
