It’s been hot and feeling like summer, which means it’s watermelon season around here! I don’t know about you, but I tend to eat a little less in the summer when it’s really hot. While I love the warmer weather and wouldn’t trade it for anything, I like to remain cool! Sometimes food can be heavy and make me feel even hotter and this just doesn’t work for me. Those of you who know me understand that I “run hot”. š I can’t think of a better way to cool off (besides a delicious cocktail) than a yummy salad!
Hey, I’m not inventing a salad here. Lots of people mix arugula with watermelon and feta and it’s delicious every time. I believe the honey garlic vinaigrette is what sets this watermelon, arugula and feta salad apart from the rest! It’s SO bright! Have you ever watched the Disney movie Ratatouille? It’s one for my all time favorites and Mya and I just watched it a couple of days ago! Remember when Remy takes Emile up to the roof to roast a mushroom over the chimney? And they get struck by lightning?! Emile comes up with the word and Remy proclaims the mushroom tastes “lightningy”?! Well, this vinaigrette is LIGHTNINGY!!
It’s not only lightningy in taste, but also in the time it takes to throw it all in a bowl and get it ready to go over your beautiful arugula!

- 5 oz arugula
- 1/2 seedless watermelon, cut into 1" cubes
- 3 tbsp apple cider vinagar
- 1 tbsp honey
- 1 clove garlic, minced
- 1/4 cup olive oil
- salt & pepper to taste
- 1 cup feta, crumbled

Wash and dry the arugula and place in a large bowl.

Cut watermelon into 1" cubes and set aside. Watermelon has a ton of water, so you'll toss it all together when ready to eat.

In a small bowl, add apple cider vinegar, honey, minced garlic, olive oil and salt and pepper to taste (5 turns of the grinder for me!). Whisk to fully combine.

When ready to serve, toss the arugula with about half of the vinaigrette. Drizzle more dressing to your taste, being careful not to overdress. You may use it all and you may have a little left over.

Add the watermelon and toss gently to combine.

Serve immediately with feta crumbled over each serving.
